Smoothness of concrete

What combination of cement and sand would I use to achieve a very smooth finish to concrete staues and does it matter what type of sand I use?

1 part Portland Cement (i use "Ivory" but standard gray is fine)
3 parts Clean, "sharp" sand (it has a different name just about everywhere you go, plasterers sand or mortar sand are most common)
and the smallest amount of water you can manage while still being able to get the mix to settle well into your mold. i find that vibrating the mold with an old sander works well

this will give very good strong, smooth statue.

PS. technically this isn't "concrete" as there are no stones or gravel. it is a basic Mortar mix
